Blackberry Buttermilk Cake

A real quick dessert recipe that’s sure to please everyone, this Blackberry Buttermilk Cake rocks the house.  Only takes 20 minutes to prepare, plus baking time.  This is Steve R Morse in beautiful, sunny Fort Lauderdale with another fun recipe for the weekend.  Enjoy!

 

1c flour

1/2 t baking powder

1/2 t baking soda

1/4 t salt

4 T butter, softened

2/3 c plus 1 1/2 T sugar

1 large egg, at room temperature

1 t vanilla

1/2 c buttermilk, at room temperature

1 1/4 c blackberries, plus more for serving

whipped cream for serving

 

Preheat oven to 400.  Butter a 9 inch round cake pan and line the bottom with parchment paper.  Butter the paper.  In a small bowl, whisk the flour, baking powder, baking soda and salt.  In a large bowl, using a mixer, beat the butter with the 2/3 cup of sugar at medium speed until fluffy, 3 minutes.  Beat in the egg and vanilla.  At low speed, beat in the buttermilk and dry ingredients in 3 alternating batches, ending with the dry ingredients.; do not overbeat.  Gently fold the batter just until blended, then scrape into the pan and smooth the top.  Scatter the 1 1/4 cups of blackberries over the batter, lightly press them in.  Sprinkle remaining sugar over mixture.  Bake for 30 minutes.  Transfer the cake to a rack.  Cool 10 minutes, Invert and remove cake from pan and let cool.  Serve with whipped cream.

    This is my favorite cake. It is moist, not too sweet and has a wonderful berry flavor. I haven’t made it it, but the recipe is simple and since I’m not a good baker, I think this is ‘right up my alley.

So what do you think? Really.........
