Fish Roma Recipe – LOW CAL

Servings: 2  Difficulty:  Easy   Calories:  under 500

1 lb.  thin fish filets (I used flounder, branzini last time, or try snapper)

1lb campari tomatoes

1 T olive oil

2 cloves of garlic, minced finely

1 T chopped basil

Preheat oven to 425.  In a bowl, cut tomatoes in half and toss with olive oil, garlic, basil and salt and pepper.  Spray a pyrex pan with non-stick spray, and pour tomatoes into pan.  Cook for 5 minutes.  Salt and pepper the fish.  When the tomatoes have cooked for 5 minutes, put the fish on top of the tomatoes and continue to cook everything together for 8 minutes.  Then broil the fish for an additional 2 minutes.  That’s it.  Easy, lo-cal, delicious.  This is Steve R Morse in Fort Lauderdale with another cool recipe.
