Spinach sauteed with Garlic
Spinach sauteed with garlic is so easy to make and looks and tastes like something from a fancy restaurant.
2 bags of spinach
cloves from 1 head of garlic (about 20)
sea salt
olive oil
Preheat the oven to 375. Place the garlic on a cookie sheet and drizzle with oil. Roast in the oven for 15 minutes. Heat a deep skillet with oil. Transfer the garlic to the skillet. Add the spinach and liberally coat with oil. Place a cover on the skillet, but with tongs turn the spinach as it wilts. Let the spinach continue to cook for 5 minutes. Season with sea salt. I love this recipe, however I lighty brown the garlic in the skillet and then add the spinach. Saves washing a baking sheet and i’m the first to admit that i’m lazy.
I do a variation of this dish by rendering 6 oz of pancetta (miniced) and place the crispy bits aside. In a large saute pan, place the garlic cloves (whole) in 4 to 5 tablespoons of olive oil. Let simmer at low temperature until the cloves start to brown and begin to take on a slight transparent appearance. Remove the garlic cloves from the oil and set aside. Chop the raw spinach instead of leaving it whole leaf. Raise the pan with the garlic infused olive oil to medium and add the spinach. Once the spinach begins to wilt, put the garlic and pancetta bits back in the spinach and serve.
The garlic infused oil and salty bits of pancetta add a bit of “Je ne s’est pas”
